Savoury Zucchini Patties
Breakfast can be a tricky time for those of us who cannot eat eggs. You can try this yummy recipe as a special treat to start your day off right!
Ingredients:
2 grated medium zucchinis
2 eggs, beaten or egg substitute
Egg substitute - 2 tablespoons of ground flax seed mixed with 6 tablespoons of hot water (mixed until egg-like consistency)
1/2 cup chopped cooking onion
1/2 cup chopped mushrooms
1/2 cup all-purpose flour or gluten free flour (Bob’s Red Mills has a great option!)
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
salt and pepper to taste
2 tablespoons oil
Directions:
Grate zucchinis and pat them dry to remove excess moisture. Mix zucchini, eggs/egg substitute, onions, mushrooms, flour, cheese until well blended. Add salt and pepper to taste.
Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls and flatten. Cook for a few minutes on each side until golden.
